Making your own salad dressing is easy, cheap and free from trans fats, sugar, preservatives or artificial flavors. This healthy dressing is naturally gluten-free and dairy-free and you can easily vary the flavor with different herbs, basil, chives or sundried tomatoes.
You could use it over a salad, over roasted vegetables, as a sauce for pasta, or as a dip for crackers.

Recipe, US measurements
1/2 cup cashews (Preferably soaked in water for at least 4 hours. It is optional, but it makes them more nutritious. Read more.)
2,5 teaspoons white wine vinegar
1/2 cup fresh dill
0,5 teaspoon salt
1/2 cup water
- If you have soaked your cashews- rinse them and put them in a blender.
- Blend until you have a smooth nutbutter.
- Add the other ingredients and blend until you have a smooth texture.
