When I first tried this raw food porridge I thought it was the best breakfast I had ever had. It was so good. I used to eat it every morning for a couple of months without ever getting tired of it. It is sweet, creamy with crunchy bits of nuts and apples and the milk is just delicious.
It is pretty easy to make. You just put all of the ingredients in a blender and in a minute you will have the best porridge ever. You don´t have to soak the nuts but they will be easier to digest and they will be more nutritious if you do.
This porridge will keep you satisfied all the way to lunch. It is full of vitamins, minerals and healthy fats from the nuts. I use brazil nuts in this recipe. I have tried other nuts as well, but this is my favorite.
Recipe, 1 serving
1/4 – 1/2 cup Brazil Nuts
2 Figs soaked in 1 cup of water over night.
- Put all the ingredients in a blender with 1/4 cup of the soaking water from the figs.
- Blend at low speed and stop just before you have a smooth texture. You want to leave some pieces of nuts and apples in the porridge.
- Pour the porridge into a bowl, sprinkle lots of cinnamon on top and serve with cashew milk.
Creamy cashew milk
1/2 cup cashew nuts
Rinse the cashews and mix them with the rest of the soaking water from the figs to creamy milk.
Add more water if the milk is too thick. Add a small piece of a fig if you want the milk sweeter.
You can also make a lot of cashew milk and keep it in the fridge. It will keep for several days.
