How to Make the Prebiotic Super Drink – Kvass
I have been experimenting with different kinds of foods that are fermented and will give me more of those friendly gut bacteria. It is so important to have an abundance of friendly happy bacteria in your gut. It will determine not only how you are feeling physically but also mentally since your gut biome is very closely connected to your mental wellbeing. (Watch the video on the bottom of the page).
This recipe is so easy to make
This probiotic drink is called kvass and it has been made by people all over the world, especially Russia for over 1000 years. It used to be a way for people to avoid being sick as the low ph level and friendly bacteria killed parasites and harmful bacteria.
The old recipe was made mostly with beets, but I have made my own Christmas inspired version with apples, cinnamon, cloves and honey. The honey is needed to get the fermentation going and the longer you let it ferment the more tangy, bubbly and slightly sour the drink will become. The longer you let it ferment the more good bacteria and the less sugar your drink will have. It is up to you to taste it and decide what you prefer.

Super Healthy Prebiotic Christmas Drink
Ingredients
- 1 liter of water
- 2 tbsp Honey
- 4 red apples
- 2 cinnamon sticks
- 8 cloves
Instructions
STEP 1: First fermentation
1. Begin by cleaning a jar with boiled water. It is important to be sure no bad bacteria will grow in your jar.
2. Wash the apples and cut away the twig and core. Cut them in big pieces, put the cloves in the jar, add the cinnamon sticks and pieces of apple. If you want you can vary this recipe as much as you want. You can use any kind of fruit or berries.
3. Add apples, cinnamon sticks and cloves to the jar.
4. Mix honey and some of the water until it is completely dissolved. Pour it over the fruit.
5. Pour the rest of the water over the fruit.
6. Close the lid and leave at room temperature (in a preffarbly warm place) for 2 (to 3) days.
7. After 2-3 days you can taste the drink. Strain it and drink it as is now if you like. You can eat the apple that you have in the strainer if yo want. its a bit moushy but it is filled with friendly gut bacteria. One tip is to use in in a smoothie or in your youghurt wih cinnamon and honey.
If you want carbonation, go to step 2.
STEP 2: Second fermentation for carbonation
8. Strain the drink and the kvass into clean bottles, put the lid on and let them stand in a warm place for another two days. Just to be sure, burp the bottles once a day to get rid of any access air by opening the lid.
9. After two days, give it a try and see if you want to leave it for a day or two more. When you are happy with the flavor keep it in the fridge (The fermentation then stops)and enjoy it every day to get a dose of your heathy friendly gut bacteria christmas drink.
TIP!
There can be a lot of pressure so DO NOT shake the bottle first to "check for bubbles".
